Once seated you will be served fresh fava beans with creme fraiche, mint and meyer lemon zest. The wine is a Brovia Roero Arneis "Sanchin Vezza D/Alba, 2006. This will be followed with Jumbo Scallop and Lychee Gazpacho and Cucumber Spaghetti. The wine for this dish will be Luigi Ferrando Erbaluce "Cascina Cariola," 2007 Next sink your teeth into a seared rare Tandoori rubbed sushi grand tune with orange saffron braised endive and roast radish. Sample a Luigi Ferrando Carema "White Label," 2004. Still hungry? Get ready for Balsamic marinated quail with avocado, heirloom tomato and chioggia beet mosaic, served with a Luigi Ferrando Carema "Black Label," 2003. And the last dish before desert is Long Island duck ragu, Madagascar green peppercorns, pasta blanket and wild ramps. The wine accompaniament is a Brovia Barolo, 2004 and a Brovia Barolo "Rocche Dei Brovia," 2000. Always room for desert -- of course! There is just enough sweet in this Mixed Berry Blanc de Noir Trrine with wild berry gelato. The desert wine is a Luigi Ferrando "Solativo" Erbaluce di Caluso Vendemmia Tardiva 2005.  We keep hearing advertisements for "Staycations," What is up with that! One works hard all year just to gear up for VACATION. The idea of time off is to take advantage of the 4 "Rs" -- to rest, rejuvenate, relax and re-acquaint ourselves with those in our lives. How can one possibly do that, if they are staying in their own back yards. There is still cooking to do, so no great out-to-dinner meals. Beds still need to be made, rooms need to be picked up, and all those beach towels need to be washed. Staring at the lawn, you realize that needs to be mowed.  The town of Brewster, 5 minutes from the Inn, will once again host The 23rd Annual Brewster in Bloom, May 1,2,3, 2009. The Whalewalk Inn has its own daffodil gardens and the wisteria, mock cherry trees, the rhododendrons, the lovely lilacs, and lily of the valley will all be in bloom.
