Whalewalk Inn
Granola Breakfast Pizza

Serves: 6
Preparation Time: 10 minutes
Baking Time: 15 minutes

This pancake is baked in a pizza pan and topped with bananas, brown sugar, and sour cream. Serve with strawberries and blueberries to add a splash of color.

Topping
1 cup brown sugar
1/4 cup water
3 bananas, sliced
1 cup sour cream

Pancake
2 eggs
1 3/4 cups milk
2 Tbs. olive oil
1 tsp. maple syrup
2 cups pancake mix
3/4 cup granola (without raisins)
3/4 cup macadamia nuts, chopped
(pecans, walnuts, or almonds may be substituted)

Preheat oven to 425 degrees. Combine brown sugar and water in a saucepan. Add several banana slices and bring to a low boil, stirring occasionally. In a a large bowl beat the eggs, milk, oil, and maple syrup. Add the pancake mix and beat the mixture by hand until smooth. Coat the inside of a 12- or 14-inch pizza pan with non-stick cooking oil spray. Pour the batter into the pan and sprinkle granola and nuts evenly over the batter. Bake in the lower third of the oven for 12 to 15 minutes. Cut the pie into wedges and top with sliced bananas and brown sugar topping. Add a dollop of sour cream. Serve with seasonal fresh fruit.
