Balsamic Country Potatoes
5 pound of potatoes, boiled (red, white or yellow)
¼ cup oil
½ cup white Balsamic vinegar
1 onion, chopped
½ head of red cabbage, shredded
1 ½ to 2 pounds of Kielbasa, sliced
Salt and pepper to taste
One day ahead, put potatoes in enough cold water to cover. Add salt. Bring to a boil. As soon as they boil, remove from heat and cool. Store in plastic container. The next morning put potatoes in a roasting pan, add onion, toss with oil, add salt and pepper, and then toss again with the vinegar. Bake at 450 degrees for 40 minutes or until tender, lower heat to 350 degrees and add cabbage and sausage. Bake for another ½ hour. Serves 12.
