Blueberry Buttermilk Pancakes

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon sugar
1 large egg
2 cups buttermilk, plus two additional tablespoons if necessary
2 tablespoons melted butter, vegetable oil or bacon fat
2 cups blueberries

Combine the flour, baking soda, baking powder, and sugar in a large bowl.  Beat the egg, add the buttermilk and oil.  Add the dry ingredients.  Grease griddle and use ¼ cup measure for each pancake.  Top with the blueberries.  When batter bubbles, flip and cook until tender to the touch.  Serves 4 with 3 pancakes each.

Can substitute bananas or other favorite fruit.
