Beat the egg, add the buttermilk and oil. Add the dry ingredients. Grease griddle and use ¼ cup measure for each pancake. Top with the blueberries. When batter bubbles, flip and cook until tender to the touch. Serves 4 with 3 pancakes each. Can substitute bananas or other favorite fruit. |
